Luca and Silva Vangelista farm 23 hectares in Le Marche Italy and, since 2016, have grown organic Khorasan, an ancient variety of wheat that is rich in proteins, minerals and selenium, and highly digestible gluten.
All the seeds come from their previous year's harvest, the Khorasan yield is small, and the quality is excellent.
It is stone ground to preserve all the aromatic essential oils from the wheat germ and then transformed - freshly milled - in small batches using bronze dies and slow, natural drying.
